Hatch Chili Egg Noodle Skillet

12 oz egg noodles

2 tablespoons olive oil

1 small onion, diced

2 cloves garlic, minced

2 medium Hatch green chilies, roasted, peeled, and diced (or canned if not available)

1 cup diced bell peppers (red or orange for sweetness)

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon chili powder

Salt and pepper, to taste

4 large eggs

1 cup shredded cheese (cheddar or pepper jack)

Fresh cilantro, for garnish

1 avocado, sliced (for serving)

Instructions
 

Cook the Noodles: In a large pot, bring salted water to a boil. Add egg noodles and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic, diced Hatch chilies, and bell peppers. Cook for another 3-5 minutes until the peppers are softened.

      Add Spices & Noodles: Sprinkle the ground cumin, smoked paprika, chili powder, salt, and pepper into the skillet. Stir until the veggies are evenly coated. Next, fold in the cooked egg noodles, mixing everything until well combined.

        Prepare the Eggs: Create four small wells in the noodle mixture. Crack an egg into each well. Cover the skillet with a lid and let it cook for about 5-7 minutes, or until the egg whites are set but the yolks are still slightly runny (or cook longer if you prefer firmer yolks).

          Add Cheese: Once the eggs are nearly set, sprinkle the shredded cheese over the top. Re-cover the skillet for another minute or two, allowing the cheese to melt.

            Garnish & Serve: Remove from heat and garnish with fresh cilantro. Serve immediately with sliced avocado on the side.
