2 medium Thai eggplants, diced

2 tablespoons olive oil

1 teaspoon salt

1 cup Hatch green chiles, roasted, peeled, and diced

1 small red onion, finely chopped

1 cup cherry tomatoes, halved

½ cup fresh basil leaves, torn

½ cup fresh cilantro, chopped

2 tablespoons fish sauce (or soy sauce for a vegetarian version)

1 tablespoon lime juice

1 tablespoon brown sugar

1 teaspoon minced garlic

1 teaspoon grated ginger

Optional: crushed peanuts or sesame seeds for garnish

Prepare the Eggplants: Start by preheating your oven to 400°F (200°C). Toss the diced Thai eggplants in a bowl with olive oil and salt. Spread them out on a baking sheet and roast for about 20-25 minutes, or until they are tender and lightly browned. Let them cool.
