1 tsp baking powder

1/2 tsp cinnamon (plus extra for topping)

1/4 tsp salt

1 cup unsweetened applesauce

1 large egg

1 tbsp honey or maple syrup

1 tsp vanilla extract

1/2 cup milk (dairy or non-dairy)

1 medium apple, peeled and diced (Granny Smith or Honeycrisp work well)

Cooking spray or a small amount of coconut oil for the pan

Instructions
 

In a large mixing bowl, combine the whole wheat flour, baking powder, baking soda, cinnamon, and salt. Mix well to ensure even distribution of dry ingredients.

    In a separate bowl, whisk together the applesauce, egg, honey (or maple syrup), vanilla extract, and milk until smooth and well combined.

      Slowly pour the wet mixture into the dry ingredients, stirring gently until just combined. Be careful not to overmix; it's okay if there are a few lumps.
