2 cups baby spinach

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, thinly sliced

1 cup fresh mozzarella balls (bocconcini)

1/4 cup fresh basil leaves, torn

1/4 cup black olives, pitted and sliced

1 tablespoon extra virgin olive oil

1 tablespoon balsamic vinegar

1 teaspoon Dijon mustard

Salt and pepper to taste

Begin by preparing all your vegetables. Rinse the baby spinach thoroughly under cold water and pat dry with a paper towel. Cut the cherry tomatoes in half and dice the cucumber. Thinly slice the red onion to ensure even distribution in the salad.

    In a large mixing bowl, combine the baby spinach, halved cherry tomatoes, diced cucumber, sliced red onion, mozzarella balls, torn basil leaves, and sliced black olives. Gently toss the ingredients together to mix well.
