2 medium zucchinis (about 1 ½ cups grated)

1 cup whole wheat flour

½ cup rolled oats

½ teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

¼ teaspoon salt

3 tablespoons honey or maple syrup

1 large egg

1 teaspoon vanilla extract

1/3 cup unsweetened applesauce

½ cup chopped nuts (walnuts or pecans) or chocolate chips (optional)

¼ cup shredded coconut (optional)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a muffin tin with paper liners or spray it with non-stick cooking spray.

    Prep the Zucchini: Grate the zucchinis using a box grater or food processor. Squeeze out excess moisture from the grated zucchini using a clean kitchen towel or cheesecloth. Set aside.

      Mix Dry Ingredients: In a large mixing bowl, combine the whole wheat flour, rolled oats, baking soda, baking powder, ground cinnamon, and salt. Whisk well to ensure there are no lumps.

        Blend Wet Ingredients: In another bowl, whisk together the honey (or maple syrup), egg, vanilla extract, and unsweetened applesauce until smooth.

          Combine Ingredients: Pour the wet ingredients into the dry ingredients. Gently fold in the grated zucchini. If using, add in the chopped nuts or chocolate chips and shredded coconut as well. Mix until just combined, being careful not to overmix.

            Fill Muffin Tin: Divide the batter evenly among the muffin cups—fill each about 2/3 full to allow for rising.

              Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
