Herb Roasted Garlic Mushroom Pizza Bites

1 cup small mushrooms, cleaned and halved

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

1/2 cup marinara sauce (store-bought or homemade)

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1 tablespoon fresh parsley, chopped (for garnish)

1 package of store-bought puff pastry (thawed)

Optional: crushed red pepper flakes for spice

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Prepare the Mushrooms: In a mixing bowl, combine the halved mushrooms, olive oil, minced garlic, oregano, thyme, salt, and pepper. Toss until the mushrooms are well coated.

      Roast the Mushrooms: Spread the coated mushrooms onto the prepared baking sheet in a single layer. Roast in the preheated oven for 15-20 minutes, or until they are golden and tender. Stir halfway through to ensure even roasting. Once done, remove them from the oven and set aside.

        Roll Out the Puff Pastry: On a lightly floured surface, roll out the puff pastry sheet to thin it out slightly. Cut the pastry into 2-inch squares or circles (a cookie cutter works well for circles).

          Assemble the Pizza Bites: Place a small spoonful of marinara sauce in the center of each pastry square. Add a few roasted garlic mushrooms on top, followed by a generous sprinkle of mozzarella and Parmesan cheese.
