1 lb large shrimp, peeled and deveined

1/4 cup honey

4 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon fresh ginger, grated

1 tablespoon olive oil

1 tablespoon fresh lemon juice

1/2 teaspoon red pepper flakes (adjust for heat preference)

Salt and pepper to taste

1 bell pepper (any color), cut into 1-inch pieces

1 red onion, cut into wedges

1 zucchini, sliced into rounds

8-10 wooden or metal skewers

Instructions
 

Prepare the Marinade: In a medium bowl, whisk together the honey, minced garlic, soy sauce, grated ginger, olive oil, lemon juice, red pepper flakes, salt, and pepper until well combined.

    Marinate the Shrimp: Add the shrimp to the marinade and toss to coat. Cover and marinate in the refrigerator for at least 30 minutes (up to 2 hours for more flavor).
