Ingredients
  

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup jasmine rice (or rice of choice)

2 cups water or chicken broth for cooking rice

1 tablespoon vegetable oil

3 cloves garlic, minced

1 teaspoon fresh ginger, grated

1/2 cup soy sauce (low-sodium recommended)

1/4 cup honey

2 tablespoons rice vinegar

2 teaspoons sesame oil

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening sauce)

1 cup broccoli florets (steamed)

1 cup carrots, julienned (steamed)

1/4 cup green onions, sliced (for garnish)

1 tablespoon sesame seeds (optional, for garnish)

Instructions
 

Cook the Rice: In a medium saucepan, combine jasmine rice and water (or chicken broth). Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes, or until rice is tender and water is absorbed. Fluff with a fork and set aside.

    Prepare the Sauce: In a bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger. Set aside.

      Cook the Chicken: In a large skillet or wok, heat vegetable oil over medium-high heat. Add the chicken pieces and cook for about 5-6 minutes, stirring occasionally, until browned and cooked through.

        Add Sauce: Pour the prepared sauce over the chicken and bring to a simmer. Once simmering, stir in the cornstarch-water mixture to thicken the sauce. Cook for an additional 2-3 minutes until the sauce has thickened and coats the chicken well.

          Steam the Vegetables: While the chicken cooks, you can steam the broccoli florets and julienned carrots until tender but still bright in color, about 3-5 minutes.

            Assemble the Bowls: In each serving bowl, place a scoop of cooked rice, followed by a generous portion of the honey garlic teriyaki chicken. Top with steamed broccoli and carrots.
