1 lb baby carrots (or large carrots cut into fries)

2 tablespoons honey

2 tablespoons Dijon mustard

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley for garnish (optional)

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Carrots: If using large carrots, peel and cut them into thin, fry-like shapes. If using baby carrots, you can leave them whole or halve them lengthwise for thinner fries.

      Make the Honey Mustard Sauce: In a mixing bowl, whisk together the honey, Dijon mustard, olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper until well combined.

        Coat the Carrots: Place the carrot fries in a large bowl. Pour the honey mustard mixture over the carrots and toss well until they are evenly coated.

          Arrange on a Baking Sheet: Line a baking sheet with parchment paper for easy cleanup. Spread the coated carrot fries in a single layer, ensuring they have enough space to roast evenly.
