For the Chicken Marinade:

1 lb boneless, skinless chicken thighs, diced

3 tablespoons soy sauce

1 tablespoon gochujang (Korean red chili paste)

1 tablespoon sesame oil

2 tablespoons honey

2 cloves garlic, minced

1 teaspoon ginger, freshly grated

For the Lettuce Cups:

1 head of butter or iceberg lettuce, leaves separated and washed

1 cup shredded carrots

1 small cucumber, julienned

2 green onions, chopped

1 tablespoon sesame seeds (toasted, for topping)

For Garnish (optional):

Fresh cilantro

Lime wedges

Instructions
 

Marinate the Chicken:

    - In a bowl, combine soy sauce, gochujang, sesame oil, honey, garlic, and ginger. Mix well.

      - Add the diced chicken thighs to the marinade and toss well to coat. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).

        Cook the Chicken:

          - Heat a large skillet over medium-high heat. Add a splash of vegetable oil.

            - Once hot, add the marinated chicken (discarding excess marinade) to the skillet. Cook for about 6-8 minutes, stirring frequently, until the chicken is cooked through and slightly caramelized.

              Prepare the Lettuce Cups:

                - While the chicken is cooking, prepare your lettuce cups by gently separating and washing the leaves of butter or iceberg lettuce. Pat them dry with a paper towel.

                  Assemble the Cups:

                    - On a serving platter, place the lettuce leaves facing upwards. Spoon a generous amount of the cooked chicken onto each leaf.

                      - Top with shredded carrots, cucumber, and chopped green onions.

                        Garnish and Serve:
