Lemon Parmesan Couscous Chicken Bowls

1 cup couscous

1 1/4 cups chicken broth (or water)

1 lb boneless, skinless chicken breasts

2 tablespoons olive oil, divided

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Zest of 1 lemon

2 tablespoons fresh lemon juice

1/2 cup grated Parmesan cheese

1 cup cherry tomatoes, halved

1 cup baby spinach

1/4 cup fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Couscous: In a medium saucepan, bring the chicken broth (or water) to a boil. Once boiling, stir in the couscous, remove from heat, cover, and let it sit for about 5 minutes until the liquid is absorbed.

    Season the Chicken: While the couscous cooks, season the chicken breasts with garlic powder, onion powder, salt, and pepper.

      Cook the Chicken: In a large skillet over medium-high heat, heat 1 tablespoon of olive oil. Add the seasoned chicken breasts and cook for about 6-8 minutes on each side, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C). Remove from the skillet and let rest for a few minutes before slicing.

        Combine Couscous and Flavorings: Fluff the cooked couscous with a fork and stir in the lemon zest, lemon juice, and the remaining tablespoon of olive oil. Mix in the grated Parmesan cheese until well combined. If desired, adjust the seasoning with more salt and pepper.

          Prepare the Spinach and Tomatoes: In the same skillet used for the chicken, add the halved cherry tomatoes and baby spinach. Sauté for about 2-3 minutes until the spinach is wilted and the tomatoes are slightly softened.

            Assemble the Bowls: To serve, divide the lemon Parmesan couscous into bowls. Top with the sliced chicken, sautéed spinach and tomatoes, and garnish with chopped parsley.

              Enjoy: Drizzle with a little extra lemon juice if desired and serve warm.
