4 bone-in, skin-on chicken thighs

1/4 cup Dijon mustard

1/4 cup pure maple syrup

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon paprika

Salt and pepper to taste

For the Carrot Mash:

4 large carrots, peeled and chopped

1 medium Yukon gold potato, peeled and cubed

1/4 cup heavy cream (or milk for a lighter version)

2 tablespoons butter

Instructions
 

Marinate the Chicken:

    - In a medium bowl, whisk together Dijon mustard, maple syrup, olive oil, minced garlic, paprika, salt, and pepper.
