Mexican Chicken Taquitos

2 cups cooked shredded chicken (rotisserie or homemade)

1 cup shredded cheese (cheddar, Monterey Jack, or a Mexican blend)

1/2 cup salsa (mild or spicy, to your preference)

1 tsp ground cumin

1 tsp chili powder

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper to taste

12 small corn tortillas

Cooking oil (for frying)

Fresh cilantro, chopped (for garnish)

Sour cream and guacamole (for serving)

Instructions
 

Prepare the Filling: In a medium bowl, combine the shredded chicken, shredded cheese, salsa, cumin, chili powder, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are fully incorporated.

    Heat the Tortillas: In a skillet over medium-low heat, warm the corn tortillas for about 30 seconds on each side until they are pliable. You can cover them with a damp towel to keep them warm while you heat the others.

      Assemble the Taquitos: Take a warm tortilla and add about 2 tablespoons of the chicken filling to the center. Roll the tortilla tightly around the filling, and secure with a toothpick if needed. Repeat this process for the remaining tortillas and filling.

        Fry the Taquitos: In a deep skillet or frying pan, add enough cooking oil to cover the bottom of the pan, about 1/2 inch deep. Heat the oil over medium heat. Once hot, carefully place the rolled taquitos seam-side down in the oil. Fry them in batches, about 3-4 at a time, for 3-4 minutes on each side, or until they are golden brown and crispy.

          Drain: After frying, remove the taquitos and place them on a plate lined with paper towels to drain excess oil.

            Serve: Arrange the crispy taquitos on a serving platter, and optionally garnish with fresh chopped cilantro. Serve with sour cream and guacamole on the side for dipping.
