3 medium apples (Granny Smith or Honeycrisp), peeled, cored, and diced

1 tablespoon lemon juice

1/4 cup granulated sugar

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1 tablespoon all-purpose flour

For the Crust:

1 cup all-purpose flour

1/4 teaspoon salt

1/4 cup granulated sugar

1/2 cup unsalted butter, chilled and cubed

1-2 tablespoons cold water

For the Crumble Topping:

1/2 cup oats

1/4 cup brown sugar

1/4 cup all-purpose flour

1 teaspoon ground cinnamon

1/4 cup unsalted butter, melted

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Apple Filling: In a mixing bowl, combine the diced apples with lemon juice, granulated sugar, ground cinnamon, nutmeg, and all-purpose flour. Toss until the apples are well coated. Set aside.

      Make the Pie Crust: In a large bowl, mix together 1 cup of flour, salt, and sugar. Add the cubed, chilled butter and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs. Gradually add cold water, one tablespoon at a time, until a dough forms. Do not overwork the dough.

        Shape the Crusts: Roll out the dough on a floured surface to about 1/8 inch thick. Cut into 3-inch circles, and gently press each circle into the cups of a greased muffin tin, coming up the sides to create a mini crust.

          Add the Apple Filling: Spoon the prepared apple filling evenly into each crust, filling them about three-quarters full.

            Prepare the Crumble Topping: In a bowl, combine oats, brown sugar, flour, and cinnamon. Add the melted butter and stir until the mixture is crumbly. Distribute the crumble topping evenly over the apple filling in each cup.

              Bake the Cups: Bake in the preheated oven for 25-30 minutes, or until the crumble topping is golden brown and the apples are tender.

                Cool and Serve: Allow the mini apple pie crumble cups to cool slightly in the muffin tin before carefully removing them. Serve warm, optionally topped with a scoop of vanilla ice cream or a dollop of whipped cream.
