Ingredients

4 large croissants

1 cup cooked, shredded chicken (rotisserie chicken works well)

1/2 cup Caesar dressing

1/2 cup grated Parmesan cheese

1/2 cup croutons, crushed

1 cup fresh romaine lettuce, chopped

1/4 teaspoon garlic powder

Salt and pepper to taste

Olive oil spray (optional)

Freshly cracked black pepper, for garnish (optional)

Extra grated Parmesan, for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Chicken Mixture: In a bowl, combine the shredded chicken, Caesar dressing, grated Parmesan cheese, crushed croutons, chopped romaine lettuce, garlic powder, salt, and pepper. Mix until well combined.

Slice the Croissants: Carefully slice each croissant in half horizontally. Be gentle to keep the croissant halves intact.

Assemble the Melts: On the bottom half of each croissant, generously spoon the chicken mixture. You can pack it a little bit, ensuring that you get a good filling in each croissant half.

Top and Close: Place the top halves of the croissants back over the filling. If desired, lightly spray the outside of each croissant with olive oil spray to enhance browning.

Bake: Arrange the assembled croissant melts on a baking tray lined with parchment paper. Bake in the preheated oven for 12-15 minutes, or until the croissants are golden brown and the filling is heated through.

Serve and Garnish: Remove from the oven and sprinkle with freshly cracked black pepper and extra grated Parmesan if using. Serve warm, and enjoy your delightful Mini Chicken Caesar Croissant Melts!
