Mini Chicken Salsa Biscuit Stacks

Ingredients
  

2 cups cooked chicken, shredded

1 cup salsa (your choice of mild, medium, or hot)

1 cup cheddar cheese, shredded

1/2 cup sour cream

1 teaspoon cumin

1 teaspoon chili powder

1/2 teaspoon garlic powder

1 can (10 oz) refrigerated biscuit dough

2 tablespoons fresh cilantro, chopped (for garnish)

Optional: jalapeño slices for heat

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Chicken Mixture: In a large mixing bowl, combine the shredded chicken, salsa, cumin, chili powder, garlic powder, and half the cheddar cheese. Mix until well combined.

      Prepare the Biscuit Dough: Open the can of biscuit dough and separate the biscuits. Use a rolling pin to flatten each biscuit to about 1/4 inch thick. This will help create stacks that are easy to assemble.

        Bake the Biscuits: Place the flattened biscuits onto a greased baking sheet. Bake in the preheated oven for 10-12 minutes or until golden brown. Remove from the oven and allow them to cool slightly.

          Assemble the Stacks: Take one biscuit and layer it with a spoonful of the chicken mixture, followed by a dollop of sour cream, then some of the remaining cheddar cheese. Place another biscuit on top and repeat the layering process until you have a stack of 3 biscuits.

            Add the Toppings: Once all stacks are assembled, sprinkle the remaining cheese on top of each stack and return them to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.

              Garnish and Serve: Remove from the oven and let cool slightly. Garnish with chopped cilantro and jalapeño slices if desired. Serve warm and enjoy!
