Mini Chicken Tostada Cones

1 lb ground chicken

1 cup black beans (canned, rinsed and drained)

1 cup corn kernels (frozen or fresh)

1 cup diced tomatoes (fresh or canned, drained)

1 tsp chili powder

1 tsp cumin

½ tsp garlic powder

½ tsp onion powder

Salt and pepper to taste

12-15 mini flour tortillas (about 4 inches in diameter)

1 cup shredded cheddar cheese

½ cup fresh cilantro, chopped

1 avocado, diced

1 lime, cut into wedges

Sour cream or Greek yogurt (optional, for garnish)

Instructions
 

Cook the Chicken: In a large skillet over medium heat, add ground chicken. Cook until browned and no longer pink, about 6-8 minutes.

    Season: Stir in black beans, corn, diced tomatoes, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Mix well and allow to simmer for about 5 minutes, until heated through and flavors meld.

      Prepare Tostada Cones: Preheat the oven to 375°F (190°C). Take the mini flour tortillas and mold each one into a cone shape, using a cone-shaped mold or a muffin pan. Make sure they hold their shape and aren’t too thick at the edges.

        Bake the Cones: Place the tortilla cones in the oven for about 8-10 minutes, until they are slightly crispy. Keep an eye on them to avoid over-browning.

          Assemble the Tostada Cones: Once the cones are ready, remove them from the oven and let them cool slightly. Fill each cone with the chicken mixture, top with shredded cheddar cheese, diced avocado, and cilantro.

            Serve: Arrange the filled cones on a serving platter. Squeeze fresh lime juice over them and garnish with sour cream or Greek yogurt if desired. Serve immediately for the best crunch!
