4 large eggs, hard-boiled and chopped

2 tablespoons mayonnaise

1 teaspoon Dijon mustard

1 green onion, finely chopped

1 tablespoon fresh dill, chopped

Salt and pepper, to taste

2 large butter croissants

1/4 cup arugula or lettuce, for garnish

1 teaspoon paprika, for garnish (optional)

Instructions
 

Prepare the Egg Salad: In a medium bowl, combine the chopped hard-boiled eggs, mayonnaise, Dijon mustard, green onion, and fresh dill. Mix gently until well combined. Season with salt and pepper to taste. Set aside.

    Prepare the Croissants: Preheat your oven to 350°F (175°C). Slice the butter croissants in half laterally, taking care not to cut them all the way through. Open them slightly like a book.

      Bake the Croissants: Place the open croissants on a baking sheet and toast them in the preheated oven for about 5-7 minutes, or until they are warm and slightly golden. Remove from the oven and let them cool slightly.

        Assemble the Croissant Circles: Take spoonfuls of the egg salad mixture and fill each croissant half generously. Close the croissant and repeat with the remaining halves until all the egg salad is used.

          Garnish and Serve: Place arugula or lettuce on a serving platter and arrange the filled croissant circles on top. Sprinkle lightly with paprika for added flavor and color, if desired.
