Mini Grilled Veggie Sandwich Circles

1 large zucchini, thinly sliced

1 medium red bell pepper, sliced into rings

1 medium yellow squash, thinly sliced

1 cup mushrooms, sliced

1 cup fresh spinach

4 ounces goat cheese, softened

1 tablespoon balsamic vinegar

1 tablespoon olive oil

1 teaspoon garlic powder

Salt and pepper to taste

8 small whole-grain pita bread pockets or sandwich rounds

Fresh basil leaves for garnish (optional)

Instructions
 

Prepare the Vegetables: In a large bowl, combine the zucchini, red bell pepper, yellow squash, and mushrooms. Drizzle with olive oil, balsamic vinegar, garlic powder, salt, and pepper. Toss until everything is evenly coated.

    Grill the Vegetables: Preheat a grill pan or outdoor grill to medium-high heat. Place the marinated vegetables on the grill and cook for about 5-7 minutes on each side until they are tender and grill marks appear. Remove from the grill and let cool slightly.

      Assemble the Sandwiches: Cut the pita bread pockets in half or use the sandwich rounds. Spread a generous layer of softened goat cheese on one side of each piece of bread.

        Add the Fillings: Layer the grilled vegetables and fresh spinach on half of the bread pieces. Top with the other halves to create mini sandwiches.

          Grill the Sandwiches: Clean the grill pan and return it to medium heat. Place the assembled sandwiches on the grill and press down gently with a spatula. Grill for about 2-3 minutes on each side until the bread is golden brown and crispy.

            Garnish and Serve: Remove the sandwiches from the grill. Optional: Garnish with fresh basil leaves before serving. Cut into quarters or serve whole as bite-sized snacks.
