Mini Grilled Zucchini Feta Sliders

2 medium zucchinis, sliced into 1/2-inch thick rounds

1 cup feta cheese, crumbled

1/4 cup fresh dill, chopped (or 1 tablespoon dried dill)

1/4 cup cherry tomatoes, chopped

1/4 cup Greek yogurt

1 tablespoon olive oil

1 tablespoon lemon juice

Salt and pepper to taste

8 small whole-grain slider buns

1 cup arugula or baby spinach

Optional: Balsamic glaze for drizzling

Instructions
 

Preheat the Grill: Preheat your grill or grill pan to medium-high heat.

    Prepare Zucchini: Pat the zucchini slices dry with a paper towel. Brush both sides with olive oil and season with salt and pepper.

      Grill Zucchini: Place the zucchini slices on the grill and cook for about 3-4 minutes on each side or until grill marks form and the zucchini is tender. Remove from heat.

        Mix Feta Filling: In a bowl, combine the crumbled feta, chopped dill, and cherry tomatoes. Add lemon juice and Greek yogurt to the mixture; stir until well combined. Season with additional salt and pepper if necessary.

          Assemble Sliders: Slice the slider buns in half. On the bottom half of each bun, layer a generous spoonful of the feta mixture on top, followed by a grilled zucchini slice and a handful of arugula. Top with the other half of the bun.

            Serve: Arrange the sliders on a platter. If desired, drizzle with balsamic glaze before serving for extra flavor.
