Mini Mac & Cheese Jalapeño Cups

1 cup elbow macaroni

1 cup sharp cheddar cheese, shredded

1 cup pepper jack cheese, shredded

2 cups milk

1/4 cup unsalted butter

1/4 cup all-purpose flour

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

4 large jalapeños, halved and seeds removed

1/2 cup breadcrumbs (optional, for topping)

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Cook the Macaroni: In a large pot, bring salted water to a boil and cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

      Make the Cheese Sauce: In a medium saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for about 1-2 minutes until it starts bubbling but not browning. Gradually whisk in the milk, making sure to remove any lumps. Continue to cook on medium heat until the mixture thickens, about 5-7 minutes.

        Add the Cheese: Reduce the heat to low and stir in the shredded sharp cheddar and pepper jack cheese until they are fully melted and incorporated into the sauce. Add garlic powder, onion powder, smoked paprika, salt, and pepper to taste.

          Combine Macaroni and Cheese Sauce: Fold the cooked macaroni into the cheese sauce, mixing until all pasta is well coated.

            Prepare the Jalapeños: Arrange the halved jalapeños in a greased muffin tin, cut side up. Spoon the mac and cheese mixture generously into each jalapeño half.

              Optional Topping: If you’d like a crispy topping, sprinkle breadcrumbs over each filled jalapeño.

                Bake: Place the muffin tin in the preheated oven and bake for 15-20 minutes until the cheese is bubbly and jalapeños are tender.

                  Garnish: Remove from the oven and let cool for a few minutes. Garnish with fresh cilantro or parsley, if desired.

                    Serve: Carefully remove the jalapeño cups from the muffin tin and serve warm as an appetizer or snack.
