Ingredients

1 pound boneless, skinless chicken breasts, diced

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon cumin

Salt and pepper, to taste

1/2 cup cherry tomatoes, halved

1 cup mini sweet bell peppers, sliced

1/2 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

4 whole wheat pita pockets

1/2 cup Greek yogurt (for serving)

Optional: Sliced avocado and lime wedges for garnish

Instructions

Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken and season with garlic powder, onion powder, paprika, cumin, salt, and pepper. Cook for about 6-8 minutes or until the chicken is cooked through and no longer pink, stirring occasionally.

Add Veggies: Once the chicken is cooked, add in the cherry tomatoes, mini sweet bell peppers, and red onion. Sauté for an additional 3-4 minutes until the vegetables are tender but still crisp. Remove from heat and stir in the chopped cilantro.

Prepare Pita Pockets: While the chicken and vegetables are cooking, warm the pita pockets in a microwave or directly on the stovetop for a few seconds until soft and pliable. (Be careful not to overheat).

Assemble the Pockets: Carefully open each warmed pita pocket and stuff it with the chicken and vegetable mixture.

Serve: Top each filled pita pocket with a dollop of Greek yogurt and add any optional toppings like sliced avocado or lime wedges.

Enjoy: Serve the mini pepper chicken pita pockets warm and enjoy these flavorful bites!
