Mini Tex-Mex Zucchini Bites

Ingredients
  

2 medium zucchinis

1 cup corn kernels (fresh or canned)

1/2 cup black beans, rinsed and drained

1/2 cup shredded cheddar cheese

1/4 cup crumbled queso fresco (optional)

1/4 cup diced red bell pepper

1/4 cup finely chopped red onion

1/4 cup fresh cilantro, chopped

1 large egg

1/2 cup breadcrumbs (preferably panko)

1 teaspoon ground cumin

1 teaspoon garlic powder

1/2 teaspoon chili powder

Salt and pepper, to taste

Cooking spray or olive oil, for greasing

Instructions
 

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with cooking spray or olive oil.

    Rinse the zucchinis and slice them about 1/4 inch thick. Use a small spoon or melon baller to scoop out a bit of the center of each slice, creating a small cup for the filling. Set the zucchini cups aside.

      In a large mixing bowl, combine the corn, black beans, cheddar cheese, queso fresco (if using), diced red bell pepper, red onion, cilantro, egg, breadcrumbs, cumin, garlic powder, chili powder, and a pinch of salt and pepper. Mix well until all the ingredients are thoroughly combined.

        Spoon the Tex-Mex filling into each zucchini cup, packing it slightly to ensure it holds together.

          Arrange the filled zucchini bites on the prepared baking sheet.

            Bake in the preheated oven for 20-25 minutes, or until the zucchini is tender and the tops are golden brown.

              Remove from the oven and let cool for a few minutes before garnishing with additional cilantro or a sprinkle of cheese, if desired.
