Ingredients

For the Chicken Marinade:

4 boneless, skinless chicken thighs

2 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon ground cinnamon

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to taste)

3 cloves garlic, minced

Juice of 1 lemon

Salt and pepper to taste

For the Couscous:

1 cup couscous

1 1/2 cups chicken broth (or vegetable broth)

1/2 cup raisins

1/4 cup slivered almonds, toasted

1/2 teaspoon ground turmeric

1/4 teaspoon cinnamon

Salt to taste

Fresh cilantro or parsley for garnish

For Serving:

Lemon wedges

Greek yogurt (optional)

Instructions

Marinate the Chicken:

In a bowl, combine olive oil, ground cumin, coriander, cinnamon, smoked paprika, cayenne pepper, minced garlic, lemon juice, salt, and pepper. Add the chicken thighs, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight for deeper flavor.

      Cook the Chicken:

Preheat the grill or a large skillet over medium-high heat. Remove the chicken from the marinade and discard the marinade. Grill or sauté the chicken for about 6-7 minutes on each side, or until cooked through and juices run clear (internal temperature should reach 165°F/75°C). Remove from heat and let rest for a few minutes.

          Prepare the Couscous:

While the chicken is cooking, bring the chicken broth to a boil in a medium saucepan. Stir in the turmeric, cinnamon, and salt. Remove from heat and add the couscous and raisins. Cover and let sit for 5 minutes.

              Fluff the Couscous:

After the couscous has absorbed the liquid, fluff it with a fork. Incorporate the toasted slivered almonds for added crunch.

                  Plate the Dish:

Slice the rested chicken and serve it over a bed of the seasoned couscous. Garnish with freshly chopped cilantro or parsley and serve with lemon wedges and a dollop of Greek yogurt if desired.

                      Enjoy:
