1 cup graham cracker crumbs

1/2 cup unsweetened shredded coconut

1/4 cup powdered sugar

1/4 cup melted coconut oil

1/2 teaspoon vanilla extract

1 cup semi-sweet chocolate chips

2 tablespoons coconut milk (canned or carton)

A pinch of sea salt (optional)

Extra shredded coconut for garnish (optional)

Instructions
 

Prepare the Base:

    In a mixing bowl, combine the graham cracker crumbs, shredded coconut, and powdered sugar. Stir in the melted coconut oil and vanilla extract until the mixture is well combined and crumbly yet holds together when pressed.

      Mold the Cups:

        Line a muffin tin with cupcake liners or lightly grease the tin. Firmly press the graham cracker mixture into the bottoms and up the sides of each liner, creating a small cup shape. Make sure the base is compact to hold the filling. Place the filled muffin tin in the refrigerator for about 15-20 minutes to set.

          Prepare the Chocolate Filling:

            In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut milk. Microwave in 30-second intervals, stirring in between, until fully melted and smooth. If desired, add a pinch of sea salt for an enhanced flavor.

              Fill the Cups:
