No-Bake S’mores Cereal Bars

Ingredients
  

3 cups graham cracker cereal (like Cinnamon Toast Crunch)

1 cup mini marshmallows

1 cup semi-sweet chocolate chips

1/2 cup unsweetened almond butter (or any nut butter of choice)

1/4 cup honey or maple syrup

1/2 teaspoon vanilla extract

Pinch of salt

Additional mini marshmallows and chocolate chips for topping

Instructions
 

Prepare the Pan: Line an 8x8 inch square baking dish with parchment paper, allowing some overhang for easy removal. Lightly grease the parchment with non-stick spray.

    Melt the Mixture: In a medium saucepan over low heat, combine the almond butter, honey (or maple syrup), vanilla extract, and a pinch of salt. Stir constantly until the mixture is smooth and well-combined, about 3-5 minutes.

      Combine Ingredients: Remove the saucepan from heat and immediately add the graham cracker cereal, 1 cup of mini marshmallows, and 1 cup of chocolate chips to the mixture. Stir gently until everything is evenly coated.

        Press into the Pan: Transfer the mixture into the prepared baking dish. Using a spatula or your fingers (dampened slightly to prevent sticking), press the mixture down firmly and evenly into the pan.

          Add Toppings: Sprinkle additional mini marshmallows and chocolate chips on top of the pressed mixture, pressing them down lightly so they adhere.

              Cut into Bars: Once set, lift the bars out of the pan using the overhang of the parchment paper. Place on a cutting board and slice into squares or rectangles.
