1 cup rolled oats

1 cup mixed nuts (almonds, walnuts, cashews)

1/2 cup pumpkin seeds

1/2 cup dried cranberries or raisins

1/4 cup honey or maple syrup

1/2 teaspoon vanilla extract

1/4 teaspoon sea salt

1/2 cup nut butter (peanut, almond, or sunflower seed butter)

Optional: 1/4 cup dark chocolate chips or cacao nibs

Prepare the Base: In a large mixing bowl, combine the rolled oats, mixed nuts, pumpkin seeds, and dried cranberries. Stir well to ensure an even distribution of ingredients.

    Mix Wet Ingredients: In a separate bowl, whisk together the honey (or maple syrup), nut butter, vanilla extract, and sea salt until smooth and well combined.

      Combine Mixtures: Pour the wet mixture over the dry ingredients. Use a spatula or your hands to mix thoroughly, ensuring all the dry ingredients are coated and evenly combined. If desired, fold in the dark chocolate chips or cacao nibs at this stage.

        Form Bars: Line an 8x8-inch (20x20 cm) baking dish with parchment paper, leaving some overhang for easy removal. Transfer the mixture into the dish, pressing it down firmly and evenly to create a packed layer. You may want to use another sheet of parchment paper to press it flat.

          Chill: Refrigerate the mixture for at least 1-2 hours to set. Once firm, remove from the dish using the parchment overhang and slice into bars or squares of your desired size.
