8 oz pasta (fusilli or penne preferred)

1 can (15 oz) tuna in water, drained

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 red onion, finely chopped

1/2 bell pepper (any color), diced

1/4 cup black olives, sliced (optional)

1/4 cup fresh parsley, chopped

1/4 cup feta cheese, crumbled (optional)

Juice of 1 lemon

3 tbsp olive oil

1 tsp Dijon mustard

1/2 tsp garlic powder

Salt and pepper to taste

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain and rinse under cold water to cool. Set aside.

    Prepare the Dressing: In a small bowl, whisk together lemon juice, olive oil, Dijon mustard, garlic powder, salt, and pepper until well combined. Adjust seasoning to taste.

      Combine Ingredients: In a large mixing bowl, add the cooled pasta, drained tuna, cherry tomatoes, cucumber, red onion, bell pepper, black olives (if using), and parsley. Gently toss to mix.

        Add the Dressing: Pour the dressing over the pasta mixture. Add crumbled feta cheese if desired. Toss everything together gently until all ingredients are evenly coated.
