1 lb large shrimp, peeled and deveined

1 cup long-grain white rice

2 cups chicken broth

1 medium onion, finely chopped

3 cloves garlic, minced

1 bell pepper (red or green), diced

1 cup canned diced tomatoes (with juices)

1/2 cup BBQ sauce (your favorite brand)

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (optional, for heat)

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

Fresh cilantro or green onions, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent. Stir in the minced garlic and diced bell pepper and cook for another 2-3 minutes until the vegetables are tender.

    Cook the Rice: Add the uncooked rice to the skillet and stir to coat it in the oil and aromatics. Toast the rice for about 2 minutes, tossing frequently. This will add depth to the flavor.

      Add Liquid and Seasonings: Pour in the chicken broth, diced tomatoes (with juices), BBQ sauce, smoked paprika, cayenne pepper (if using), salt, and black pepper. Stir everything together until well combined.
