One-Pan Beef and Broccoli Stir-Fry

1 lb (450g) flank steak, thinly sliced against the grain

2 cups fresh broccoli florets

1 bell pepper (red or yellow), sliced

1 medium carrot, julienned

4 cloves garlic, minced

1-inch piece fresh ginger, grated

3 tablespoons soy sauce (low sodium recommended)

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil (divided)

1 tablespoon sesame oil

1 teaspoon honey or brown sugar

Salt and pepper to taste

Cooked jasmine rice or quinoa, for serving

Sesame seeds and sliced green onions, for garnish

Instructions
 

Prep the Beef: In a medium bowl, toss the thinly sliced flank steak with the cornstarch, a pinch of salt, and pepper. Let it sit while you prepare the vegetables.

    Make the Sauce: In a small bowl, whisk together the soy sauce, oyster sauce, sesame oil, and honey (or brown sugar). Set aside.

      Cook the Beef: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the beef in a single layer and sear for about 2-3 minutes without stirring, until browned. Flip and cook for an additional 2 minutes. Remove the beef from the pan and set aside.

        Stir-Fry the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and grated ginger, sautéing for about 30 seconds until fragrant. Then, add the broccoli florets, sliced bell pepper, and julienned carrot. Stir-fry for 5-7 minutes, until the vegetables are tender-crisp.

          Combine: Return the beef to the skillet with the vegetables. Pour the sauce over everything and stir to combine. Cook for another 2-3 minutes, allowing the sauce to thicken slightly and coating the beef and vegetables.

            Serve: Remove from heat. Serve the stir-fry over cooked jasmine rice or quinoa. Garnish with sesame seeds and sliced green onions for an extra touch of flavor.
