1 lb (450g) ground beef

1 cup long-grain white rice, rinsed

1 medium onion, diced

3 cloves garlic, minced

1 cup bell pepper, diced (any color)

1 can (14.5 oz) diced tomatoes, with juices

2 cups beef broth

1 teaspoon paprika

1 teaspoon chili powder

1 teaspoon dried oregano

Salt and pepper, to taste

1 ½ cups shredded cheese (cheddar or a cheese blend)

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Beef: In a large skillet, heat olive oil over medium heat. Add the ground beef, season with salt and pepper, and cook until browned, breaking it apart with a spatula (about 5-7 minutes). Drain excess fat if needed.

    Add the Vegetables: Stir in the diced onions, garlic, and bell pepper. Cook until the vegetables are soft and the onions are translucent, about 4-5 minutes.

      Incorporate Rice and Spices: Stir in the rinsed rice, paprika, chili powder, and oregano. Mix everything well to combine.

        Add Liquids: Pour in the diced tomatoes (with juices) and beef broth. Bring the mixture to a boil, then reduce heat to low. Cover the skillet and let it simmer for 18-20 minutes, or until the rice is cooked and has absorbed most of the liquid.

          Add Cheese: Once the rice is cooked, stir in 1 cup of shredded cheese until melted and everything is well combined. Taste and adjust seasoning if necessary.
