One-Pan Lemon Garlic Shrimp and Broccoli

1 pound (450g) large shrimp, peeled and deveined

2 cups broccoli florets

3 tablespoons olive oil, divided

4 cloves garlic, minced

Juice and zest of 1 large lemon

1 teaspoon red pepper flakes (adjust for spiciness)

Salt and pepper to taste

1 teaspoon dried oregano

1 tablespoon fresh parsley, chopped (for garnish)

Lemon wedges for serving

Prepare the Shrimp: In a medium bowl, combine the shrimp with the lemon juice, lemon zest, minced garlic, red pepper flakes, olive oil (2 tablespoons), and a pinch of salt and pepper. Let it marinate for about 15 minutes while you prep the broccoli.

    Sauté the Broccoli: In a large skillet or wok, heat the remaining tablespoon of olive oil over medium heat. Add the broccoli florets and sauté for about 4-5 minutes, or until they are bright green and just tender. Season with salt, pepper, and oregano. Remove the broccoli from the skillet and set aside.

      Cook the Shrimp: In the same skillet, add the marinated shrimp along with the marinade. Cook for about 2-3 minutes on each side, or until the shrimp are pink and cooked through. Be careful not to overcook them, as shrimp can become rubbery.

        Combine & Finish: Once the shrimp are done, add the sautéed broccoli back to the skillet. Toss everything together gently to combine and heat through for another 1-2 minutes.
