12 oz (340g) pasta (your choice, preferably penne or fusilli)

1 tablespoon olive oil

1 small onion, finely chopped

4 cloves garlic, minced

1 can (14 oz) crushed tomatoes

1 cup vegetable broth (or chicken broth)

1 cup heavy cream

1 teaspoon dried oregano

1 teaspoon dried basil (or 1 tablespoon fresh basil, chopped)

Salt and black pepper to taste

1 cup freshly grated Parmesan cheese

1 cup fresh basil leaves, chopped (for garnish)

Optional: Red pepper flakes, for heat

Cook the Pasta: In a large skillet over medium heat, add the olive oil. Once hot, add the pasta to the pan. Stir it around for about 2-3 minutes just to give it a light toast. Remove the pasta from the pan and set aside.

    Sauté Aromatics: In the same skillet, add the chopped onion and cook until translucent, about 4-5 minutes. Add the minced garlic and sauté for an additional 1 minute until fragrant.

      Create the Base: Add the crushed tomatoes, vegetable broth, and heavy cream to the skillet. Stir to combine and let the mixture come to a gentle simmer.

        Season: Sprinkle in the dried oregano, dried basil (or fresh), salt, and black pepper. If you prefer a bit of heat, add red pepper flakes to taste. Allow the sauce to simmer for about 5 minutes, stirring occasionally.

          Combine Pasta and Sauce: Return the pasta to the skillet and stir until the pasta is fully coated with the creamy tomato sauce. Cook for an additional 5-7 minutes, or until the pasta is al dente and has absorbed some of the sauce.

            Add Cheese: Remove the skillet from heat and fold in the grated Parmesan cheese until melted and incorporated. Adjust seasoning if needed.

              Garnish and Serve: Plate the creamy tomato basil pasta and garnish with fresh chopped basil leaves. Serve immediately with extra Parmesan on the side if desired.
