2 lbs baby potatoes (mixed colors if available)

4 tablespoons olive oil

2 teaspoons sea salt

1 teaspoon black pepper

2 tablespoons fresh rosemary, finely chopped

2 tablespoons fresh thyme, finely chopped

2 tablespoons fresh parsley, chopped

4 cloves garlic, minced

Zest of 1 lemon

2 tablespoons lemon juice

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Potatoes: Wash the baby potatoes thoroughly and cut them in half if they are large; leave them whole if they are small.

      Mix Ingredients: In a large mixing bowl, combine the olive oil, sea salt, black pepper, fresh herbs (rosemary, thyme, and parsley), minced garlic, lemon zest, and lemon juice. Stir until well blended.

        Coat the Potatoes: Add the potatoes to the herbal mixture and toss until each potato is evenly coated.

          Arrange on Baking Sheet: Spread the seasoned potatoes out in a single layer on a baking sheet lined with parchment paper. Ensure they have some space between them to roast evenly.
