4 bone-in or boneless pork chops (1-inch thick)

1 cup grated Parmesan cheese

1 cup breadcrumbs (plain or panko)

2 tablespoons fresh parsley, finely chopped

1 tablespoon fresh thyme, finely chopped (or 1 teaspoon dried thyme)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1/2 teaspoon salt

2 large eggs

2 tablespoons Dijon mustard

1/4 cup olive oil (for frying)

Lemon wedges (for serving)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Coating: In a medium bowl, combine the grated Parmesan cheese, breadcrumbs, parsley, thyme, garlic powder, onion powder, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

      Prepare the Pork Chops: In another bowl, whisk together the eggs and Dijon mustard until smooth.

        Coat the Pork Chops: Dip each pork chop into the egg mixture, allowing the excess to drip off, then coat with the Parmesan herb mixture, pressing firmly to ensure the coating adheres well. Place the coated chops on a plate.

          Sear the Pork Chops: Heat olive oil in a large oven-safe skillet over medium-high heat. Once the oil is hot, add the pork chops and sear for about 3-4 minutes on each side, or until they are golden brown. You may have to do this in batches to avoid overcrowding the skillet.

            Bake in the Oven: Once all the pork chops are seared, transfer the skillet to the preheated oven. Bake for 15-20 minutes, or until the internal temperature reaches 145°F (63°C) and the juices run clear.

              Rest and Serve: Remove the skillet from the oven and let the pork chops rest for 5 minutes. Serve with lemon wedges on the side to squeeze over the top for a burst of freshness!
