Peach BBQ Chicken Thighs

4 bone-in, skin-on chicken thighs

2 cups fresh peaches, pitted and chopped (or 1 cup peach preserves)

1/4 cup ketchup

2 tablespoons apple cider vinegar

1 tablespoon Worcestershire sauce

2 tablespoons soy sauce

2 tablespoons brown sugar

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

Fresh parsley, for garnish (optional)

Prepare the Marinade: In a medium bowl, combine the chopped peaches (or peach preserves), ketchup, apple cider vinegar, Worcestershire sauce, soy sauce, brown sugar, smoked paprika, garlic powder, onion powder, salt, and black pepper. Mix well until all ingredients are fully blended.

    Marinate the Chicken: Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are well-coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or preferably overnight for enhanced flavor.

      Preheat the Grill: When ready to cook, preheat your grill to medium-high heat (about 375°F/190°C). If you're using a charcoal grill, set up one side for direct heat and the other for indirect heat.

        Sear the Chicken: Remove the chicken thighs from the marinade (reserve the marinade for later). Brush the grill grates with olive oil to prevent sticking. Place the chicken skin-side down on the grill and sear for about 5-7 minutes until the skin is crispy and has grill marks.

          Cook Through: Flip the chicken and reduce the heat to medium or move it to the indirect heat side of the grill. Brush some of the reserved marinade on top of the chicken and cover the grill. Cook for an additional 20-25 minutes, or until the internal temperature reaches 165°F (75°C), basting occasionally with the marinade.

            Glaze and Finish: In the last 5 minutes of cooking, brush more marinade on the chicken to create a nice glaze. Remove the chicken from the grill and let it rest for 5 minutes.
