Peach Mac and Cheese

2 cups sharp cheddar cheese, shredded

1 cup Gruyère cheese, shredded

2 cups whole milk

2 tbsp unsalted butter

2 tbsp all-purpose flour

1 cup ripe peaches, diced (fresh or canned, drained)

1/2 tsp salt

1/4 tsp black pepper

1/4 tsp nutmeg

1/4 cup breadcrumbs

1 tbsp olive oil

1 tbsp fresh thyme leaves (optional, for garnish)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the macaroni and cook according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce: In a medium saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for about 1 minute, stirring constantly until it turns a light golden color.

      Add Milk: Slowly pour in the whole milk while continuing to whisk. Bring the mixture to a gentle simmer and let it thicken, about 3-4 minutes.

        Incorporate Cheese: Gradually add the cheddar and Gruyère cheese, stirring until fully melted and smooth. Season with salt, pepper, and nutmeg.

          Mix in Peaches: Add the diced peaches to the cheese sauce, stirring gently to combine. Fold in the cooked macaroni until everything is fully coated.

            Prepare for Baking: Preheat your oven to 350°F (175°C). Transfer the mac and cheese mixture into a greased baking dish.

              Breadcrumb Topping: In a small bowl, combine breadcrumbs and olive oil. Mix well until the breadcrumbs are evenly coated. Sprinkle the breadcrumb mixture on top of the mac and cheese.
