Polenta with Italian Chicken

For the Polenta:

1 cup coarse cornmeal (polenta),

4 cups water or chicken broth,

1 cup grated Parmesan cheese,

2 tablespoons unsalted butter,

Salt to taste,

Freshly cracked black pepper to taste.

For the Italian Chicken:

4 boneless, skinless chicken thighs,

1 tablespoon olive oil,

1 small onion, finely chopped,

3 cloves garlic, minced,

1 teaspoon dried oregano,

1 teaspoon dried basil,

1 teaspoon crushed red pepper flakes (optional),

1 can (14 oz) diced tomatoes (with juice),

1/2 cup chicken broth,

Salt and pepper to taste,

Fresh basil leaves for garnish.

Instructions
 

Make the Polenta: In a large pot, bring the water or chicken broth to a boil. Gradually whisk in the cornmeal, reducing the heat to medium. Stir continuously for about 15-20 minutes until thick and creamy. Remove from heat, then stir in the Parmesan cheese, butter, salt, and pepper. Keep warm.

    Prepare the Italian Chicken: In a large skillet over medium heat, heat olive oil. Add the chopped onion and sauté until translucent (about 3-4 minutes). Add minced garlic and cook for an additional 1 minute.

      Brown the Chicken: Add the chicken thighs to the skillet, seasoning both sides with salt, pepper, oregano, basil, and crushed red pepper flakes. Cook for 5-7 minutes on each side until they are browned.

        Simmer: Pour in the diced tomatoes (with juice) and chicken broth. Bring to a simmer and cover the skillet. Let it cook for about 20-25 minutes, or until the chicken is fully cooked and tender.
