Ingredients

4 boneless, skinless chicken breasts

Salt and pepper, to taste

1 tablespoon olive oil

1 cup pomegranate juice

1/4 cup honey

2 tablespoons soy sauce

1 tablespoon apple cider vinegar

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1/2 teaspoon red pepper flakes (optional for heat)

1/2 cup pomegranate seeds (for garnish)

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Chicken: Season the chicken breasts generously with salt and pepper on both sides.

Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken breasts and sear for about 5-7 minutes on each side, or until they are golden brown and cooked through. Remove the chicken from the skillet and let it rest.

Make the Glaze: In the same skillet, lower the heat to medium and add the minced garlic and grated ginger. Sauté for about 1 minute until fragrant.

Combine the Ingredients: Add the pomegranate juice, honey, soy sauce, apple cider vinegar, and red pepper flakes (if using) to the skillet. Stir well to combine.

Reduce the Glaze: Allow the mixture to simmer for about 10-12 minutes, stirring occasionally, until it thickens and coats the back of a spoon.

Glaze the Chicken: Return the seared chicken to the skillet, turning to coat each piece thoroughly in the pomegranate glaze. Cook for an additional 2-3 minutes to heat the chicken through.

Garnish and Serve: Once the chicken is fully glazed, serve it on a platter, drizzled with any remaining glaze and topped with fresh pomegranate seeds and chopped parsley.
