1 cup water

1/2 cup unsalted butter

1/4 cup granulated sugar

1 teaspoon vanilla extract

1 cup all-purpose flour

1/2 cup pumpkin puree

2 large eggs

1 tablespoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon salt

Vegetable oil (for frying)

For the Cinnamon Sugar Coating:

1/2 cup granulated sugar

1 tablespoon ground cinnamon

Prepare the Dough: In a medium saucepan, combine the water, butter, sugar, and vanilla extract. Bring to a boil over medium heat, stirring until the butter melts completely. Once boiling, remove from heat.

    Mix in the Flour: Add the flour to the saucepan and stir vigorously with a wooden spoon until the mixture forms a ball and pulls away from the sides of the pan.

      Incorporate Pumpkin and Eggs: Allow the mixture to cool slightly (about 5 minutes), then mix in the pumpkin puree. Beat in the eggs one at a time, ensuring each one is fully incorporated before adding the next. The dough should be smooth and slightly sticky.

        Season the Dough: Add the ground cinnamon, nutmeg, and salt to the dough, mixing until well combined.

          Heat the Oil: In a deep skillet or frying pot, heat about 2 inches of vegetable oil over medium-high heat until it reaches 350°F (175°C). You can check the temperature by dropping a small piece of dough into the oil; if it sizzles and rises, it’s ready.

            Pipe the Churros: Fit a pastry bag with a star tip (or a large ziploc bag with the corner snipped off) and fill it with the churro dough. Carefully squeeze the dough into the hot oil, cutting it into 6-inch lengths. Fry in batches to avoid overcrowding.

              Fry Until Golden: Fry the churros for about 2-3 minutes per side, or until they are golden brown. Remove them from the oil with a slotted spoon and let them drain on paper towels.

                Coat in Cinnamon Sugar: In a shallow dish, mix together the granulated sugar and ground cinnamon for the coating. Toss the hot churros in the cinnamon sugar until they are completely coated.
