Ingredients

1 loaf of brioche or challah bread (10-12 slices, cubed)

2 cups canned pumpkin puree

6 large eggs

2 cups milk (whole or almond milk)

1/2 cup brown sugar

1 tablespoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

1/2 cup chopped pecans or walnuts (optional)

1/2 cup maple syrup (for drizzling)

Instructions

Prepare the Bread: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish. Cut the brioche or challah bread into cubes and evenly distribute them in the prepared dish.

Combine Ingredients: In a large mixing bowl, whisk together the pumpkin puree, eggs, milk, brown sugar, vanilla extract, cinnamon, nutmeg, ginger, and salt until well blended.

Mix Together: Pour the pumpkin mixture evenly over the cubed bread. Use a spatula to gently push down the bread cubes to ensure they are all coated with the mixture.

Add Nuts: If you're using nuts, sprinkle them over the top of the casserole for added crunch.

Chill: Cover the dish with plastic wrap and let it chill in the refrigerator for at least 1 hour, or overnight for a deeper flavor.

Bake: Remove the plastic wrap and bake the casserole in the preheated oven for 40-45 minutes, or until the top is golden brown and the center is set.

Serve: Let it cool for a few minutes before slicing. Drizzle with maple syrup and serve warm.

Enjoy: Pair with fresh fruit or whipped cream for added indulgence!
