1 cup whole wheat flour

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 tablespoon ground cinnamon

1 teaspoon ground nutmeg

1/2 teaspoon ground ginger

1/4 teaspoon ground cloves

1 cup pumpkin puree (canned or fresh)

1/2 cup sugar

1/2 cup brown sugar, packed

1/2 cup vegetable oil

1/4 cup milk (dairy or plant-based)

2 large eggs

1 teaspoon vanilla extract

1/2 cup walnuts or pecans, chopped (optional)

1/4 cup raisins or chocolate chips (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly with non-stick spray.

    In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves until well combined.

      In another bowl, combine pumpkin puree, sugar, brown sugar, vegetable oil, milk, eggs, and vanilla extract. Mix until smooth and creamy.

        Gradually add the wet ingredients to the dry ingredients, stirring just until combined. Avoid overmixing; a few lumps are perfectly fine.

          If desired, fold in the chopped nuts and raisins or chocolate chips for added texture and flavor.

            Divide the batter evenly among the muffin cups, filling each about two-thirds full.

              Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.

                Once baked, allow the muffins to cool in the pan for about 5 minutes, then transfer to a wire rack to cool completely.
