Ingredients

1 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ teaspoon ground ginger

¼ teaspoon ground cloves

½ teaspoon salt

¾ cup granulated sugar

½ cup packed brown sugar

1 cup canned pumpkin puree (not pumpkin pie filling)

½ cup vegetable oil

3 large eggs

1 teaspoon vanilla extract

½ cup chopped walnuts or pecans (optional)

½ cup white chocolate chips (optional)

Powdered sugar for dusting

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan or line it with parchment paper for easy removal.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves, and salt until well combined. Set aside.

Combine Sugars and Wet Ingredients: In a large mixing bowl, mix the granulated sugar, brown sugar, and pumpkin puree until smooth. Add the vegetable oil, eggs, and vanilla extract. Beat until the mixture is well combined and creamy.

Incorporate Dry Ingredients: Gradually add the dry mixture to the wet ingredients, mixing gently until just combined. Be careful not to overmix; a few lumps are okay.

Add Nuts and Chocolate (Optional): If using, fold in the chopped walnuts or pecans and white chocolate chips for added texture and sweetness.

Pour Batter into Pan: Pour the batter into the prepared baking pan, spreading it evenly with a spatula.

Bake the Snack Cake: Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean. The cake should be lightly golden.

Cool and Dust: Allow the cake to cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely. Once cool, dust the top with powdered sugar.

Cut into Squares: Once the cake is completely cooled, cut it into squares or rectangles as desired.

Serve and Enjoy: Serve the Pumpkin Spice Snack Cake Squares at room temperature. They make the perfect delightful treat for fall gatherings, coffee breaks, or dessert!
