2 cups pumpkin puree

1 cup heavy cream

1 cup mascarpone cheese

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 tablespoon pumpkin pie spice

8-10 ginger snap cookies, crushed

1 cup yellow cake, crumbled (store-bought or homemade)

1/4 cup pecans, chopped (optional)

Whipped cream, for topping

Ground cinnamon, for garnish

In a mixing bowl, combine the pumpkin puree, mascarpone cheese, powdered sugar, vanilla extract, and pumpkin pie spice. Mix until smooth and well combined, then set aside.

    In another bowl, whip the heavy cream until soft peaks form, then gently fold it into the pumpkin mixture. This will create a light and airy filling.
