1 cup pumpkin puree (canned or homemade)

1 medium zucchini, grated and excess moisture squeezed out

1/2 cup all-purpose flour (or gluten-free flour)

1/4 cup cornmeal

1 large egg

1/4 cup grated Parmesan cheese (optional)

2 green onions, finely chopped

1 tsp garlic powder

1 tsp onion powder

1/2 tsp smoked paprika

Salt and pepper to taste

1/4 cup fresh parsley, chopped

Olive oil or vegetable oil for frying

Sour cream or yogurt for serving (optional)

Prepare the Zucchini: Start by grating the zucchini and place it in a clean kitchen towel. Twist the towel to squeeze out as much moisture as possible. This will help your fritters stay crispy.

    Mix Ingredients: In a large mixing bowl, combine the pumpkin puree, grated zucchini, flour, cornmeal, egg, and optional Parmesan cheese. Stir until well combined.

      Season the Mixture: Add in the green onions, garlic powder, onion powder, smoked paprika, salt, and pepper. Finally, fold in the chopped parsley, mixing until all ingredients are thoroughly incorporated.

        Heat the Oil: In a large skillet, heat about 1/4 inch of olive oil over medium heat. To test if the oil is ready, drop a small spoonful of the mixture in; if it sizzles, it’s ready.

          Form the Fritters: Using a tablespoon or your hands, scoop out portions of the mixture and gently flatten them into patties. Make sure they're not too thick, around 1/2-inch thick works best for even cooking.

            Fry the Fritters: Carefully place the fritters into the hot oil, frying in batches to avoid overcrowding. Cook for 3-4 minutes on each side, or until golden brown and crispy. Add more oil to the skillet as needed.

              Drain Excess Oil: Once cooked, transfer the fritters to a plate lined with paper towels to absorb any excess oil.
