Quick BBQ Chicken Quesadillas with Fresh Salsa

2 cups cooked chicken, shredded

1/2 cup BBQ sauce (your favorite brand)

1 1/2 cups shredded cheddar cheese

1/2 cup shredded mozzarella cheese

4 large flour tortillas

1 tablespoon olive oil

1/2 teaspoon garlic powder

1/4 teaspoon smoked paprika

1/4 teaspoon black pepper

Fresh cilantro, chopped (for garnish)

For Fresh Salsa:

2 medium tomatoes, diced

1/4 red onion, finely chopped

1 jalapeño, seeded and minced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt to taste

Prepare the BBQ Chicken: In a medium bowl, mix the shredded chicken with BBQ sauce, garlic powder, smoked paprika, and black pepper until fully coated. Set aside.

    Make the Fresh Salsa: In a separate bowl, combine diced tomatoes, red onion, jalapeño, cilantro, and lime juice. Season with salt to taste and mix well. Let it sit to meld the flavors while you prepare the quesadillas.

      Assemble the Quesadillas: Heat olive oil in a large skillet over medium heat. Place one tortilla in the skillet. On one half of the tortilla, layer 1/4 of the BBQ chicken mixture and sprinkle 1/4 cup of cheddar and 2 tablespoons of mozzarella cheese. Fold the other half of the tortilla over the filling.

        Cook the Quesadilla: Cook for about 3-4 minutes or until the bottom is golden and crispy. Carefully flip and cook the other side for another 3-4 minutes until the cheese is melted and the tortilla is crispy. Remove from the skillet and keep warm. Repeat with remaining tortillas and filling.
