2 salmon fillets (6 oz each)

1 bunch of fresh asparagus (about 1 lb)

3 tablespoons olive oil

3 cloves garlic, minced

Zest and juice of 1 large lemon

1 teaspoon dried oregano

Salt and pepper to taste

Lemon wedges, for serving

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven: Preheat your oven to 400°F (200°C).

    Prepare the asparagus: Trim the tough ends off the asparagus. In a large mixing bowl, toss the asparagus with 1 tablespoon of olive oil, salt, and pepper to taste. Arrange the asparagus on a baking sheet in a single layer.

      Prepare the salmon: In the same bowl, combine the remaining olive oil, minced garlic, lemon zest, lemon juice, dried oregano, salt, and pepper. Place the salmon fillets on the baking sheet alongside the asparagus, and brush the garlic-lemon mixture generously over the top of the salmon.

        Bake: Bake in the preheated oven for about 12-15 minutes, or until the salmon fillets flake easily with a fork and the asparagus is tender but still crisp.

          Serve: Remove from the oven and garnish with freshly chopped parsley. Serve with lemon wedges on the side for an extra tangy kick.
