1 pound large shrimp, peeled and deveined

2 medium zucchinis, spiralized into noodles (zoodles)

4 cloves garlic, minced

2 tablespoons olive oil

Juice and zest of 1 large lemon

1/2 teaspoon red pepper flakes (adjust to taste)

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (optional, for serving)

Instructions
 

Prepare the Zoodles:

    Using a spiralizer, create zucchini noodles from the zucchinis. Set aside.

      Cook the Shrimp:

        In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to let it brown.

          Add the Shrimp:

            Add the shrimp to the skillet and season with salt, black pepper, and red pepper flakes. Cook for about 2-3 minutes on each side until the shrimp turn pink and opaque.

              Add Lemon Flavor:

                Once the shrimp are cooked, pour in the lemon juice and add the lemon zest. Toss everything together to combine and let it simmer for an additional minute.

                  Combine Zoodles:

                    Gently add the spiralized zucchini noodles to the skillet, tossing them with the shrimp and sauce for about 2-3 minutes until the zoodles are just tender but still al dente. Remove from heat.

                      Serve:
