Quick Skillet Apple Crisp with a Healthy Twist

3 large apples, peeled, cored, and sliced (Granny Smith or your favorite variety)

1/2 cup rolled oats

1/3 cup whole wheat flour

1/4 cup maple syrup (or honey)

1/2 tsp cinnamon

1/4 tsp nutmeg

1/4 cup coconut oil or unsalted butter, melted

1/4 cup chopped walnuts or pecans

Pinch of salt

Vanilla ice cream or yogurt for serving (optional)

Instructions
 

Heat a large skillet over medium heat. Add the sliced apples to the skillet and sprinkle with cinnamon and nutmeg. Stir well to coat the apples in the spices and cook for about 5 minutes until they begin to soften.

    While the apples are cooking, in a separate bowl, combine the rolled oats, whole wheat flour, chopped nuts, melted coconut oil (or butter), maple syrup (or honey), and a pinch of salt. Mix until crumbly but well combined.

      Once the apples are slightly softened, remove the skillet from heat. Evenly spread the oat mixture over the apples to form a crust.

        Return the skillet to the heat and cover with a lid. Cook for an additional 10-12 minutes, allowing the crisp topping to brown and the apples to become tender.

          Once done, remove from heat and let it cool slightly before serving. Scoop out servings and top with a scoop of vanilla ice cream or yogurt if desired.
