Roasted Garlic Hummus with Pita Chips

For the Roasted Garlic Hummus:

1 head of garlic

1 can (15 oz) chickpeas, drained and rinsed

1/4 cup tahini

3 tablespoons lemon juice (about 1 lemon)

2 tablespoons olive oil

1 teaspoon ground cumin

Salt, to taste

2-3 tablespoons water (as needed)

Fresh parsley, for garnish (optional)

For the Pita Chips:

4 whole wheat pita breads, cut into triangles

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

Salt, to taste

Instructions
 

Roast the Garlic:

    - Preheat your oven to 400°F (200°C).

      - Slice the top off the head of garlic to expose the cloves. Drizzle with a bit of olive oil and wrap it in aluminum foil.

        - Roast in the oven for 30-35 minutes until the cloves are soft and caramelized. Allow cooling slightly, then squeeze out the roasted garlic cloves.

          Prepare the Hummus:

            - In a food processor, combine the roasted garlic cloves, chickpeas, tahini, lemon juice, olive oil, ground cumin, and salt.

              - Blend until smooth. If the mixture is too thick, add water a tablespoon at a time and blend until you reach your desired consistency. Taste and adjust seasonings if needed.

                Prepare the Pita Chips:

                  - While the hummus is blending, increase the oven temperature to 375°F (190°C).

                    - Toss the pita triangles in a bowl with the olive oil, garlic powder, paprika, and salt until evenly coated.

                      - Spread the pita triangles in a single layer on a baking sheet and bake for 10-12 minutes or until golden and crispy, flipping halfway through.

                        Serve:

                          - Transfer the hummus to a serving bowl and drizzle with a little olive oil and sprinkle with fresh parsley if desired. Serve alongside the homemade pita chips for dipping!
